Pork Roast with Jala Jala Black Widow Blackberry Jalapeno Jelly

Inspiration for this dish comes from my good friend, Ralph White.

3 lb Pork Roast (this recipe works with any type pork roast or thick cut pork chops)
2 cups Blackberries, Fresh or Frozen
1 Red Apple, peeled, seeded and cut into slices
1 head Garlic cloves, separated and peeled
1/2 Jar Jala Jala Black Widow Blackberry Jalapeno Jelly
1 Tsp Thyme
1 Tsp Onion Powder
Salt and Pepper To taste
2 Tbsp Salted Butter

Preheat oven to 225 F
Season roast with Thyme, Onion Powder, Salt and Pepper
In roasting pan place garlic, Blackberries. apple slices and set Roast on top
Place in oven and cook for 2 hours
Remove from oven and Heat Black Widow jelly in microwave for 30 seconds and spoon over roast
Place Roast back in oven for another hour or until internal temp is 145 F
Spoon Pan Juice over roast and place under broiler until browned

Remove roast to a cutting board and let rest while you make the sauce
Strain pan sauce in a pan and reduce by 1/3
Stir in butter and adjust Salt and Pepper to taste

Cut Roast and serve a generous amount of blackberry sauce over the top
