Jala Jala Chicken Enchilada Casserole  (Easy)

How about a delicious casserole you can make, bake and serve in 1 hour!  This recipe uses ready made products to help speed things along, which includes Jala Jala Texacan Medium Salsa.  So here we go.  Buen Provecho!

Jala Jala Chicken Enchilada Casserole

2 tablespoons Vegetable Oil
1  cup diced yellow Onion
2 pounds large diced fresh Chicken Breast
2 teaspoons Garlic Salt
1 teaspoon Onion Powder
1/2 teaspoon Dried Oregano
1/2 cup Jala Jala Texacan Medium Salsa (For more spice substitute Jala Jala Texacan West Texas Hot Salsa)
16 ounces Sour Cream
1 Can Cream of Chicken Soup
8 ounces Shredded Cheddar and/or Monterrey Jack or Mexican Cheese Combo
9 Flour tortillas

Preheat oven to 350 F
Put oil in large dutch oven and heat to Medium.
Add onion and saute until translucent.
Add chicken, garlic salt, onion powder, oregano and cook until lightly browned.
Add Jala Jala Texacan Medium Salsa and stir in.
Turn off stove and Add Sour cream and Cream of Chicken Soup and stir in.
Grease a medium casserole dish and place 3 tortillas on bottom.
Add 1/3 of Chicken Mixture and shredded cheese.
Add 3 tortillas and 1/3 of Chicken Mixture and shredded cheese.
Add last 3 tortillas and 1/3 of Chicken Mixture and shredded cheese.
Cook at 350 F uncovered for 40 minutes.
Remove from oven and let rest 5 minutes.

Serve with Jala Jala Texacan Salsa on the side and some corn tortilla chips!!
